Recipe Swap Monday: Sweet-n-Sour Chicken

This is up a little late. I haven't been feeling well since this weekend. I think I caught the virus that has been living in my kids and Jason:)

Anyhoo, Recipe Swap Monday is brought to by Anissa of Our Chaotic Life.

Sweet-n-Sour Chicken (I am making this right now for dinner)

2 teaspoons of vegetable oil
1 pound skinless, boneless chicken breast, cut into 1-inch pieces.
(1) 8 1/4-ounce can crushed pineapple in unsweetened pineapple juice
1/4 cup of apricot preserves
1/4 cup of Hoisin sauce
1/4 teaspoon of ground pepper.

  1. Heat oil in a large non-stick skillet over medium heat. Add chicken and cook until no longer pink.
  2. Add pineapple, apricot preserves, Hoisin sauce, and pepper and simmer until sauce thickens. I like my sauce a tad juicey.

On the side I usually cook some white rice. And then I just mix the two up on my plate. Click the button for more yummalicious recipes.

  5. Hope you feel better. I went to the Dr. today and found out I have a fractured tailbone. What fun! Anyway can you do the recipe without pineapples Aden can't have it. My husband loves sweet and sour chicken -- but I have never tried to make it. It sounds delicious.

  6. I am sorry you're not feeling well Vickie! You see the doctor was too much these days. Had some leftover ravioli lasagna for dinner tonight. I just love coming across a big bite of melted cheese, yum-o!
